The Time Traveller (for so it will be convenient to speak of him) was expounding a recondite matter to us.

solid comparisons.

Global uses powdered steel. The reinforced blade steel is harder than the VG10 in your Shun classics. Harder means less weak spots to stress, so there were less microscopic fractures under the same conditions, hence your global knife held its edge better.

If I wasn't mistaken, only difference between the standard and pro line of yoshikin knives is that the pro blades are hand sharpened. You should definitely sent the global back to get it factory resharpened. Powdered steel honyaki knives are typically more difficult to sharpen, and it would be even harder to reproduce the hand honed stock cutting edge without tremendous experiences.

Shun elite uses sg2 steel which is also a highend powdered steel. They don't have the nice looking surfaces though, instead

You could fix that yourself with a strop, some polishing compounds and a lot of patience

Yeah, I found this on Chow. Pretty fun read. Unfortunately, my aim was to find somewhere to get a Global Pro Knife outside of Japan. Still, once again it seems to confirm their superiority, so I'll just have to keep looking.

Yo Cutco people: you aren't fooling me, I know full well the hailstorm of fresh and ready high school grads/FBLA types that would storm my doorstep the moment I contacted Cutco for any reason whatsoever.

Hey, cool article. found it by complete fluke. You should know that cutco will replace, repair, or refurbish your knives. if youre truly looking for knives that will stay sharp and last you a lifetime, cutco is the only company that guarantees it without exception. email me if you have any questions on how to do this.

Just as an FYI - if you mail your Shun knives to Shun, they'll send them back sharpened - and I believe they do it for no charge.

I'm so sorry to see the knife carnage - However, it seems this is the case with Damascus. Shun is a premier maker, and I would assume they'd take returns very seriously. I love my Gunter Wilhelm knives, but honetly have a custom rack, comprised of all my "most favorite" knives - Not all one brand. (Could any knife maker possibly make "the perfect knife set"??)

Your story was a very nice read on Friday afternoon. I'm seriously considering a Shun Sashimi knife for those fish you dearly love. I use a SpyderCo SharpMaker for all my knives, however I am going to take a chance on the ChefMate-120 electric sharpener - Will test out the FaberWare knives on it first, however.

73's to you and keep safe on all your high-seas adventures! : )
